Tasty Tuesday ( A day early!!)

Not sure what to call these...but my hubby said that he loved 'em so much, he'd marry me again! I always knew the way to a mans true heart was through his stomach!

How about Greek Quesadilla's?


Ingredients:

2 bags washed and cooked spinach
1/4 lemon squeezed
Wheat or white floured tortilla's (I used sundried tomato basil ones)
8oz crumbled feta cheese
chicken breast (optional)
1bag of shredded Italian blend cheese (mozzarella and others or just mozzarella will do)
1 can of quartered artichoke hearts (I usually cut them in half again)
salt & pepper to taste
and Italian seasoning (I have a huge one that I get from Sam's)


Boil spinach/drain completely and chop it up.

In a skillet pour a little Extra Virgin Olive Oil, a little garlic powder and some Italian seasoning..add chicken and cook till no longer pink then slice it up and cook a little longer .



In a bowl mix the spinach, feta cheese, lemon juice, and a little Italian cheese blend ( that's the kind at the store with, mozzarella, Parmesan, provolone ) mix well with a fork then add the artichoke hearts.


In a lightly greased frying pan over medium heat, add a lightly buttered tortilla and place butter side down, and some Italian cheese blend to the entire tortilla, then on one half add the spinach and feta mixture and the chicken. Flip the other side over it and cook on both sides for a few minutes or until lightly browned on both sides...


Then cut and serve! YUMMY!!
You can add different things, Like next time I make these I am going to add fresh mushrooms sauteed in a little butter with red onions. You can also buy some pizza dough and sprinkle EVOO on the rolled out dough and spread all the ingredients on there and bake that...
