Tasty Tuesday....On a Friday!!!

EASY CHICKEN POT PIE
So I had some cooked chicken tenders left over so I decided to make Chicken pot pie. (I took frozen chicken breast tenders and saute them in some Olive Oil and a little seasonings)
Cut them into chunks..

Then I took a bag of frozen mixed vegetables sauteed it with an onion and some garlic ( just mainly to warm it up)

Then added a can or two of cream of chicken soup! (Just the soup no other liquid you want it thick)

The added the chicken into the veggie mixture to warm it up and then threw it into a casserole dish.

Now for the topping I made a mistake and bought Filo dough (that's what happens when you take the hubby and 3 kids to the grocery store you get distracted!!) What I should have bought was puff pastry dough ( in the freezer section of the grocery store!)

But still even though I had the wrong topping they all ate it and still liked it, but trust me the puff pastry is the best! popped it in the oven at 350* for about 25 to 20 minutes or till the topping was a nice golden brown.

and then served it to the family....Nate LOVED it...Amelia well there isn't much she does like so she doesn't count. But lets just say there was no left overs!!!

Don't cha just love our fine china??? hehehe

Let me know if you try this it really is good and so easy! now gotta go fry up some catfish for my little Nate!

A day from Hell!!

Greetings,
We had the mother of all days today. Ty had a training day today so we had to scramble to get everyone taken care of..My mom and dad took Amelia, Nathan and I over to Ochsners for her appointment. Well the day started off with an unexpected stop! As soon as we got off the causeway (24 mile bridge for my northern followers that was stop and go traffic hell in itself ) Nathan had a funny look on his face as no sooner I had asked him if he was OK...he threw up all over himself! No extra clothes after all he is 6 and we haven't had extra clothes with us in quite some time. So I told my dad to get over so we can get to Kmart to buy him some new clothes to wear...oh joy. Me the bargain hunter got lucky and found him a really cute set with Cars on it for three bucks, my kind of deal!! Any way get him changed and get on our way again and still manage to make it to the doctor for 9:30 exactly!
Things go great at the doctors visit, find out that her platelet count is 35 (WOOOOHOOO for that) Doctor gives me a pat on the back for knowing what I am doing with her and this disease....which what he was talking about is that he has had FA patients before who did nothing to try and save there child's life they buried there head in the sand and refused to do a Bone marrow transplant...I really like Dr Ducos and I like that he listens to me and respects the fact that I do "know" what I am doing and that I stay on top of things with FA! So after a little discussion with him...we talked some about androgens and he help put my mind at ease that I am making the right decision in NOT putting her on them...there is just not enough data out there on their long term side effects and the out come of transplant after being on them.
So off to the hospital we go, we got Amelia checked in at the Pediatric IC unit and get Nathan settled in the sibling play room...they asked if she wanted Versed to help calm the nerves....BIG mistake, only we wouldn't find this out till later. Any way long story short...Tried to get an IV started. This child is the hardest person ever to try and get an IV started on . They couldn't use any in her arms because they were all still blown from Tuesday when we tried to get blood drawn!!!Uggghhhhh So they tried of all places her feet 4 sticks and about an hour later that was it just stop sticking her! Everyone agreed the OR would be the place to do it....problem is we need to wait till her veins get better and they have to schedule it.....so another trip over there and probably two days missed of school!
Needless to say at this time it is about 2:00 and none of us have had anything to eat...so we are all starving. But the "funniest" thing was Amelia on the versed...let me just say it doesn't agree with her...she was mean and trying to kick me, she was screaming and crying, I am so glad that it has worn off and she is back to her sweet little self!!
Now I have a massive headache and I think I'm gonna go watch some TV with my little ones!!!!

Greetings friends and faithful followers,
It is again that time of year...Amelia's annual bone marrow biopsy. We will again be having it done here at Ochsner's Hospital tomorrow. Please say a prayer that they only have to stick her once to get the IV in!! Also say a prayer that the results are the same or better than they were last year. I will do my best to update as soon as possible. I will be updating on Facebook and twitter so you can look on the right hand side of the blog to see how she is doing.
Thanks in advance for your continued prayers for my little girl!

I should be....

I should be cleaning.....but I'm not.

I should be cooking....but I'm not.

I should be washing clothes.....but I'm not.

I should be doing a lot.....but I'm not.

Instead....

I am listening to the fights and playing referee....oh joy.....I have taken back control of my living room, but I lost control of this..........

That is Nathan's room, the closet is his way of cleaning his room. he has shoved everything in there and because it is too hot to play out side, Amelia and Nate decided they needed a club house inside. I refused to give up control of the living room!

When it was time for lunch I again questioned my sanity...or rather their sanity.....my kids beg me to buy them corn dogs. I have no idea why this is what ends up happening.

Now I offered them hotdogs, but they said no they wanted corndogs.....and they only end up eating the "hotdog" on a stick...I have yet to figure that one out. Why must it be corndogs????

Go figure I will not drive myself crazy figuring them out I have way too much else I could be doing or rather SHOULD be doing...... BUT I'M NOT!!!!

These two

The cable has been out for 2 days now (for no reason at all, no rain, no wind, no explanation) so we are trying to find ways to entertain ourselves.

(that's a DVD playing in the back ground) And by the way I am not cleaning till Aug 7th! I have tried and it just keeps looking the same.

These two have taken over the livingroom...these two are like twins, these two are like an old married couple, these two keep us in stiches all day long, who needs cable when we have these two for entertainment!!

for fun we play his ribs!! This child is skin a bones, but he never stops he is like the energizer Bunny!

Lets see how many kids we can pile on daddy....

One of my favorite photos ever!

Well in the time it took me to do this post, guess what, they fixed the cable finally....I'm off to get lost in a movie or two!!!

The kids are running rampid in the living room, I have given up on trying to keep it clean...I will wait till school starts then I will be able to keep it straight! Just 33 more days till the first day of school!! I'm doing the happy dance on the inside, can ya hear it? I am looking forward to routine! I miss a schedule.
