Ok We are still here. We have been busy..no school here this last week due to Mardi Gras that I am sooooooo glad is over. And well...I've been totally addicted to Face Book!!!
Tuesday I took them to the parade with Me and My Gang. We had a great time. the weather was perfect.....

On Friday I took the kids to the park with Me and My Gang. Again the weather was beautiful just hot!! I think the temps reached 82* hard to believe that Minnesota was having a great BIG snowfall!!! The kids were in shorts! I also took Amelia to get her blood drawn for her CBC count but because I plum forgot to Thursday waited till Friday, we won't get results till some time Monday...that's OK just longer to pray for them!!!

Well gotta run busy day today Nate has a birthday party to get ready for....

Just a boring update......

It's a boring Monday morning around the house. Nathan, who is feeling so much better is playing Wall*e on the playstation and he's very excited to know that Wall*e won an Oscar last night. When I tell you the child is obsessed with Wall*e that is an understatement...we are even on a Wall*e underwear hunt! I told him maybe when we go to Disney next month we might be able to find him some.

Marshall is playing on his computer on God knows what some crazy thing called stick arena...with a friend on the phone. He likes to multitask, always on the phone and playing on the computer....but try to get him to actually do something constructive, well that's a whole nother story.

Amelia is in the dinning room/all purpose room/office playing on another computer, she is probably playing on Webkinz or watching video's on.....(gulp) You-tube. How do these kids get so good on computers at such young ages?

Kids are off from school for the whole week. Tomorrow is Mardi Gras day. Tyren has to work and I think I will be brave and take them her to our local parade. It will be short and simple, it ALWAYS is! But the kids still enjoy it and that is good enough for me. Of course the day will not go smoothly as things here never do, I just often wonder why the three of them can't get a long?!!

Thankfully dad is off Wed. and Thursday, so maybe we'll do something fun one of those days.

I think Chico will be coming home to stay either today or tomorrow. He is getting the hang of going outside but not fully trained, but with all the kids home this week, I think we will be OK.

Amelia will be going either Wed. or Thur. to have her blood draw to get counts again. I am praying that they are still the same that would be totally awesome! (as Amelia would say)

Well that just another boring day in the Dungeons....time to go make some brunch....

Tasty Tuseday yep on Wednesday again....


Life is busy..Nate is very sick with a sinus infection that is also getting into his eyes they are swollen and so very blood shot and have yucky stuff in the corners.

Today I have some cookies, which most of you have probably heard of or have made but for those of you who haven't they are good and easy!!

Cornflake Cookies

1/2 cup light corn syrup
1/2 cup sugar
Melt these two together and bring to a boil
Add: 1 cup of peanut butter stir till melted for about 1minute and remove from heat
stir in 2 cups corn flakes, coat well and drop by spoonfuls onto wax paper.

Valentine's pancakes...

Well Valentines day was pretty low key around here...
The Hubby had to work and worked late the night before...that is Mardi Gras for ya around these parts...I got a quick peck on the check(he's sick and I don't want to get it!!)"happy valentine's day and out the door for more. I think both nights after escorting the floats back he ended up getting home at 1:30am or so....

Any way back to our day, Amelia went to spend the night at my brothers so it was just me and the boys...
I made pink (they were suppose to be red) heart shaped white chocolate chip pancakes...can you say DELICIOUS...

Well here is the batter....



Here is the heart shaped pancake, I just put some batter on a spoon and made a heart outline and then filled it in.....

Flipped it over.....


And served them and they ate it up.

Global Wildlife....

OK so last Sunday we spent the day with the kids..well Nate and Amelia. Marshall said no way was he going to Global wildlife so he got to spend the day with his Uncle Jeff.
The kids had a great time and the weather was perfect!


Global Wildlife is 500 + acres where you board a "train" and they pull you around the grounds and you get to feed the animals. Some friends of ours, for Christmas, bought us a family pass, so all we have to do is pay for the feed for the animal. The bucket of feed was $20 so not that bad for a whole lot of fun. Amelia had been there before, this was Nate's first time ever and he really had a great time and really enjoyed himself.

Tasty Tuesday

Tasty Tuesday....better late than Never!!!


Deli Bread....




This is one of my family's favorites. This is the closest that you will get to a Muffalata, with out being one! I'm not the best judge of how much stuff on this one.





Pizza dough (I usually buy two of everything and make two)
Genoa Salami
Provolone cheese (sliced)
sliced ham (I usually buy a pound)
sliced turkey and
sliced green olives (drained well)I usually only buy one and spilt it in half between the two.



Roll out the pizza dough out with a rolling pin



then down the middle make one layer of ham, then add a layer of Genoa Salami, then provolone Cheese and then put a layer of olives, it's important that you put the olives on the cheese or the cheese on the olives so that when it melts it will help hold the olives in.

Then add the turkey, then wrap the sides around to wear it looks like a loaf.

take an egg beat it add a little water and then spread it over the loaf with a pastry brush....




put in the oven at 400*bake 25- 30 minutes or until golden brown.

Update.....

Thanks everyone who said a prayer. It was not pink eye, the pediatrician seems to think that she got something in her eye yesterday and that it was irritating it and maybe starting to get infected. They looked much better this afternoon, and no longer has any gunk coming from it. He started her on some eye drop antibiotics....

Prayer request....

Greetings faithful followers,
Amelia, we think, has pink eye. I am taking her today to the pediatrician to get it check out. I know that pink eye is not really a big thing, but when you get one thing it can sometimes lead to more as this may mean a dip in her immune system, something we really don't want. We want her to stay as 'healthy" as possible!
It just started late yesterday afternoon, she had been complaining about it itching, at first we thought she might have gotten something in it. We had taken them to Global Wildlife yesterday ( pictures and trip summary to follow later) and it was windy and the dust was flying. Later though it was starting to ooze gunk from it.....

My biggest fear is that it will cause her to catch more things and I really don't want that to happen to her, she has been doing really well and not getting sick very much, she has barely missed much school, a great accomplishment considering!!!
I'll let you know later what the doctor said, Thank you in advance for all of you prayers and thoughts.....

CELEBRATION.....

Today we celebrate 16 years of wedded bliss!!!

Yes, I still married him even after the preacher asked him "do you take this woman" did he proceeded to take out a fifty cent piece and toss the coin in the air....thankfully it landed on heads, we never discussed what would have happened if it would have been tails........



We've had ups and downs, good times and bad ones too, but through it all we have remained true....


I love you more today than I did 16 years ago and can only imagine our love growing deeper and stronger with each day and year that passes.

Here we are 16 years ago.... Oh what I wouldn't do to look like that again......

Tasty Tuseday....on Wednesday

Ok, So, Saturday night was Margarita night again....we had 4 birthday's to celebrate. Tyren's was one of them. so I decided to make a cake for them all. Know mind you it was not anything fancy looking.....but inside....oh my gosh it was Delicious! I tried to get fancy on the inside of the cake. I had been watching Food Networks cake challenge and thought I was tired of the same old white (almond cake). So I looked up chocolate ganache, thought hmmm that was pretty easy make so I gave it a try........I needed, heavy whipping cream and some chocolate chips and a stick of butter, here I was using the white chocolate chips as I made two types of ganache.

heat the butter and the whipping cream to just before it begins to boil....

then add it to the chocolate chips....


Stir till creamy





let it cool and layer between the cakes. I used chocolate and almond cakes and made 4 layers.Here is a picture of the finished cake....


And the inside...oh my gosh, this was yummy.......
